Ambrosia Salad

After eating smoky barbque, hamburgers or hot dogs with the heavier side salads like potato and macaroni, I find that Ambrosia salad a welcome treat with its tang of citrus, the tropical flaked coconut and of course the marshmallows all tossed in a slightly sweet creamy mayonnaise and sour cream dressing! This is one dish that can definitely double as a dessert as well.

Vitello tonnato is a classic Italian dish--perfect on a summer menu. It works equally well as a simple one-course lunch or as part of a buffet. Its beauty lies in the contrast of the sweet, delicate veal against the creamy intense sauce. I've seen other meats used in place of veal, but I don't think anything else works as well. The meat is poached rather than roasted, to keep it moist and tender.

Tomatoe and Cucumber Salad

One of my mantras in cooking is to try and keep simple delicious ingredients simple and delicious. In this case, there is nothing better than combining fresh summer tomatoes and cucumbers for a salad or side dish on a hot summers nights meal! Tossed lightly with sea salt and freshly cracked black pepper. If you want a little twist, we can add a little white vinegar to give this summer salad a little "zip" !

ORECCHIETTE WITH RAPINI AND GOAT CHEESE

Pasta may be our go-to comfort food in cold-weather months, but we love simple, light variations in the summer too. Of course, the greatest culinary gift of summer is the beautiful, abundant fresh produce. Perfect summer tomatoes need little work when tossed with homemade fettuccine and extra-virgin olive oil, goat cheese, Rapini and Orecchiette! Slightly bitter rapini (also known as broccoli rabe), marries well with the tangy goat cheese in this dish.
